On some days, you might feel just lazy to prepare a detailed menu for your lunch. This is the perfect recipe for such days. You just need a handful of ingredients that are easily available in all kitchens.

Easy Potato Thoran
A quick and simple side dish for a humble lunch menu
Ingredients
- 2 medium Potato cut in cubes and soak in water
- 1 small Onion cut through, horizontally through the center, and then slice thinly
- 2 tbsp Coconut cut into small pieces or scraped
- ½ tsp Ginger – Garlic paste
- 1 tsp Oil
- ½ tsp Mustard seeds
- 1 tsp Crushed Chilly flakes
- Salt To taste
- 1 pinch Kasuri Methi optional
- 1 tsp Fresh Coriander chopped
Instructions
- Heat oil in a pan. Add in mustard seeds and let it splutter.
- Add in the sliced onion and fry for a few minutes. Next goes the ginger garlic paste and fry till the raw smell disappears.
- Next, add in the potato cubes and mix on a high heat.
- Now is the time for adding the seasoning – sprinkle salt and crushed chilly. And mix well. Reduce heat. Cover and cook.
- Let the potato get cooked with its own moisture.
- When almost done, sprinkle Kasuri Methi or Fresh Coriander. Mix well and cover and cook for just another minute.
- Serve hot with plain curd or a simple curd curry! Enjoy!
