Easy Potato Thoran

Easy Potato Thoran

A quick and simple side dish for a humble lunch menu

Ingredients
  

  • 2 medium Potato cut in cubes and soak in water
  • 1 small Onion cut through, horizontally through the center, and then slice thinly
  • 2 tbsp Coconut cut into small pieces or scraped
  • ½ tsp Ginger – Garlic paste
  • 1 tsp Oil
  • ½ tsp Mustard seeds
  • 1 tsp Crushed Chilly flakes
  • Salt To taste
  • 1 pinch Kasuri Methi optional
  • 1 tsp Fresh Coriander chopped

Instructions
 

  • Heat oil in a pan. Add in mustard seeds and let it splutter.
  • Add in the sliced onion and fry for a few minutes. Next goes the ginger garlic paste and fry till the raw smell disappears.
  • Next, add in the potato cubes and mix on a high heat.
  • Now is the time for adding the seasoning – sprinkle salt and crushed chilly. And mix well. Reduce heat. Cover and cook.
  • Let the potato get cooked with its own moisture.
  • When almost done, sprinkle Kasuri Methi or Fresh Coriander. Mix well and cover and cook for just another minute.
  • Serve hot with plain curd or a simple curd curry! Enjoy!
