Prawn, also known as shrimp, is the tastiest seafood in India. Prawns Fry is the simplest way to prepare a dish with the tastiest seafood.

A lot of memories are associated with this dish. This takes me back to the early 2000s. Around 2002 – 2003. We are in Bangalore then. There was this Kerala Restaurant called Oasis. Oh! What an ambience! Superb. The food was also yummmmm……… Superb tasty. On special days, my then-fiancée (now, my husband) and I, used to visit there for lunch. And their Travancore Prawns (that was the name of the dish, I think) were a regular.

Years later, I tried to replicate that. And it has come out quite good, pat my back!

Equipment

  • 1 Earthen Pot
  • 1 Thick bottom Frying Pan

Ingredients
  

  • 500 grams Prawns medium-sized, cleaned and deveined

Marination

  • 1 tsp Turmeric Powder
  • tsp Chilly Powder
  • Salt to taste
  • 1 tsp Ginger-garlic paste or crushed
  • ½ tsp Lemon Juice

For stir fry

  • tbsp Coconut Oil
  • tsp Mustard seeds
  • Curry Leaves handful
  • 1 medium Onion finely sliced
  • ½ cup Coconut thinly sliced
  • 1 Green Chilly slitted
  • tsp Turmeric Powder
  • ½ tsp Chilly Powder
  • 1 – 2 tsp Pepper Powder freshly crushed is preferred

Instructions
 

Marination

  • Mix together all the ingredients in the marination group.
  • Marinate the cleaned and deveined prawns with the marination mix. Then, let them rest for 1 hour. You can also marinate and keep overnight.

Cooking of Prawns

  • Cook the marinated and rested prawns with water little in the earthen pot. Close and cover till the prawns are tender. Leave that in the pot till you are ready for frying. In this case, the extra water will dry up in the pot itself.

Stir frying

  • In the thick bottom pan, add coconut oil. When the oil is hot enough, add in the mustard. As it splutters, add in half of the curry leaves and fry for a minute.
  • Then add in the coconut pieces. Let it start catching a brown tinge.
  • Add in the sliced onion and green chilly. Let then all attain colour to a golden brown. You need to be patient in this step and fry on medium-low heat. Add in a pinch of salt, for the onion mixture. Do not overdo, as we have cooked the prawns with
  • Now is the time to add our cooked prawns. You can increase heat to medium-high. Stir and fry till whatever little water from the prawns is dried out and onion mixture gets evenly coated.
  • Sprinkle half the pepper powder and stir well. Fry till almost the correct texture.
  • Off the heat and add in the remaining pepper powder and curry leaves, mix well and leave the item in the cooked pan itself, till plating. The remaining heat will just cook the pepper and also preserve the fresh flavour.

Notes

Serve as an appetizer, starter, or a side dish with the main course. Your guests will be awed by the professionalism in the dish. But the secret of it being this simple will be in your heart only. Enjoy the moment of pride!
