Is there anyone who does not crave Chicken Fry? Most of us do. But we pull ourselves back from it for a healthy option. Usually, deep-fried items contain a high amount of oil, which is not a healthy option. Keeping that in mind, we developed a recipe that is neither fried nor with a lot of gravy but enticing your flavour hub with the taste and texture of a Chicken Fry dish! The recipe

All the ingredients required for this dish are readily available in your pantry. The ingredient list is as given below:

Ingredients

For the Masala Powder

  • 1½ inch Cinnamon
  • 3 Cloves
  • 3 Cardamom
  • ⅔ tsp Shajeera
  • ⅔ tsp Fennel seeds
  • ½ Nutmace
  • ⅛ Nutmeg
  • 1½ tbsp Coriander Seeds
  • 5-6 Kashmiri Red Chilli
  • ½ Whole Pepper
  • 1 tsp Salt

Marination of Chicken

  • 1 kg Chicken cleaned and cut into curry pieces
  • 1½ tsp Red Chilli Powder
  • ⅔ tsp Turmeric Powder
  • 2 tsp Ginger – Garlic paste
  • 1 handful of Coriander leaves chopped
  • 1 handful of Mint Leaves
  • 1 sprig of Curry Leaves
  • 1 tsp Coconut Oil
  • Salt to taste

For the Frying Process

  • 2 tbsp Coconut Oil
  • 3 medium Onions finely chopped
  • 3 sprig Curry Leaves
  • ½ tsp Ginger – Garlic paste

Method

Marination of Chicken

  • Marinate the chicken and set it aside for at least an hour.

To Prepare the Masala Powder

  • While the chicken is marinating, we need to prepare the Masala Powder. For this, take a Kadai and dry roast the spices along with salt till the spices get aromatic.
  • Let the dry fried spices cool down completely, then grind to a fine powder.
  • Keep it aside in a bowl and keep it covered to keep the aroma intact.

Frying Process

  • Heat oil in a Kadai or any thick-bottomed pan. Add curry leaves and chopped onions. Let it fry for around 5 minutes.
  • Add in the Ginger-Garlic paste and let that cook for 2 minutes.
  • Now add the marinated chicken and give a nice mix. Do this on high flame.
  • Add the masala powder and mix well again till the masala spreads evenly over the chicken pieces.
  • Lower the flame to medium-low and cook till the chicken is about 90% done.
  • Increase heat. Depending on the water remaining, cook on high heat till it dries out completely by stirring in between.
  • After the water dries out, keep stirring for about 2-3 minutes, over high heat. This would give the texture of the fried chicken.
