Ingredients

  • 1 kg Chicken cleaned and cut into curry pieces
  • 6 medium Onion sliced
  • 3 medium Potato cut into big cubes
  • 2 bulb Garlic crushed
  • 3 inch Ginger crushed
  • 6-7 Green Chilly crushed
  • 2 medium Tomato pureed
  • 2-3 sprigs Curry Leaves

Whole Spices

  • 2 inch Cinnamon Stick broken into small pieces
  • 5-6 Cloves
  • 5-6 Green Cardamom
  • 1 Bay leaf torn into two
  • 1 floret Nutmace

Masala Powders

  • 1 tsp Turmeric
  • 2 tbsp Kashmiri Chilly Powder
  • tsp Red Chilly Powder
  • tbsp Coriander Powder
  • ¾ tsp Pepper Powder
  • 2-3 tbsp Oil

Instructions

  • Heat Kadai and pour oil. Once the oil is hot, add in the whole spices. Sauté for a minute.
  • Next, add the sliced onions. Let them fry till light golden. Fry this by stirring in between and on medium-low heat to avoid burning.
  • Now is the time to add the crushed ginger, garlic and green chilly, along with curry leaves. Fry till the raw smell vanishes.
  • Put the cleaned chicken pieces and potatoes, and give a good mix—this need to be done over medium-high flame. The chicken pieces will turn whitish.
  • Once the chicken has turned whitish, add the required amount of salt and the masala powders.
  • Sauté till the masala is quite cooked and there is no raw smell.
  • Add in tomatoes and give a nice mix. Let it cook till oil starts oozing out.
  • Meantime, warm 2 cups of water for our curry.
  • As the oil starts to ooze out, pour the already warmed water and mix well.
  • Lower the heat and cook covered till chicken and potatoes are cooked well.
  • If you feel the gravy need to be thicker, let it boil over high heat till the desired consistency.
  • Tastes best with rice and chapati!
