Stir-fried long bean, popularly known as Payar Mezhikkuvarutti in Kerala is easy and can be a quickly prepared side dish with our normal lunch menu. This style of cooking is mainly from Cochin.

This dish reminds me of my paternal grandmother. (By the way, I belong to Cochin.) She never used to cut with a knife. She used to break it by hand. She used to say that this way helps us to take only the ones that are young and fresh. She used to take the seeds only for the ones that she was not able to break easily.

I would like to dedicate this recipe to her.

Equipment

  • 1 Pan to cook the long beans
  • 1 Kadai

Ingredients
  

  • 250 g Long Bean(Payar) cut into 1cm length pieces
  • 1 medium Onion chopped
  • tsp Crushed Dry Red Chilly
  • tsp Coconut Oil
  • 1 sprig Curry Leaves
  • Salt to taste
  • ¼ tsp Mustard Seeds

Instructions
 

  • Wash and clean the long beans. Cut off and remove the ends. Then cut them with a length of 1cm pieces.
  • In the pan, add the pieces, ¼ cup of water and salt as required. Cook over medium-low flame till done. In case, there is excess water even after almost cooked, dry it out over high flame.
  • Heat the Kadai and pour oil. Add in the mustard seeds and allow them to splutter.
  • Add sliced onion and stir fry. Next, we need to add the crushed chilly and stir fry for a minute or two.
  • Add the cooked long bean pieces. Stir fry till the onion and chilly masala coat the long beans uniformly.
  • Serve with rice.

Notes

Do not overcook the long beans. They should be just cooked.
